Chocolate covered strawberry

Who doesn't love a bit of chocolate dipped fruit. Especially when it is strawberry.  Here is my fail proof way.

You will need chocolate, bowl, microwave, parchment paper, and strawberries.

Put half a bag of chocolate in the bowl and microwave for 30 seconds at a time and stir until it is almost melted. Stir
and add more chocolate to temper it.

Now dip each strawberry in chocolate and place on the parchment.  Let the fruit sit for a minute and then put in to fridge. 
Enjoy!! Pair with some champs (Champaign) and sexy time!

School?

My passion besides being a wife, mom,fashionista, and makeup fanatic ; is ancient history. But, my issue is going to school for this. I started to go to school but so many blocked my way. No one thought there were jobs in that field. But, there is a HUGE job market for anthropology and archeology. I truly love reading and studying ancient cultures and it shows. I want to follow my real dream, which is get a PhD in Anthropology and minor in Egyptology. I love this field and why did I ever stop?

I got scared off and no one was there to build me up. No one was there to help me figure out what classes I need to take. It was all me, me trying to figure out my classes. I did well in school when I was going for what I wanted. When I changed my major, I fell. I went from a 3.5 gpa to a 2.0 gpa and stressed out. I had health issues arise then, too.

Being on medical leave it has given me some time to reflect on my life and goals. I get to think about what I want to do and what I should do. Honestly, I feel deep in my heart I need to go back to school for this. I know that is where I belong.  But, will I get the emotional support? Will I get the backing of people that matter most in my life? I'm not sure, but what I am sure about is that it will make me happy. I feel like this will be a start of something grand for me!

Home made mac n cheese.

Spare me the box and give me the real stuff! I was watching food network and I saw Ina Garten making man n cheese. She made it look so easy to do. And although she used expensive cheeses and truffle butter; I found I could imitate it with cheddar cheese and cream. I made my own take on her recipe.
Here is my recipe:
You need butter 3 tablespoons
4 tablespoon of flour
Salt and pepper.
Pasta
Italian bread crumbs
1 small bag of sharp cheddar
2 handfuls of mild cheddar
2 cups milk

In one pot boil pasta , then in the other melt butter and add flour. Whisk together and get the flour taste out. I warmed the milk in the microwave then added it to the butter.  You want it to thicken on medium heat while whisking and add salt and pepper.  When it is thick add cheddar and keep whisking. Add the pasta and mix together. Put into a dish and add the bread crumbs . You can either save for later or finish off in the oven at 350 for 25-30 mins.

Why the obsession with princesses? Be a queen!

Thanks to Disney many little girls want to be a princess. They want to be a part of a fairy tale and be the sing songy girl who talks to blue birds. My question is this. Why? What is it about them that makes everyone want to be them? And why does no one want to be a queen? Umm hello, queens have more power.

Queens can be just as glamorous as the princess.  They have more responsibility but, the kingdom is theirs. Queens are also influential and some have just as intriguing stories.

Real queens like Hatcheptsut, Cleopatra, Nefertiti, Queen Ti(who was a commoner in ancient Egypt) , Elizabeth , Gwynivere, Victoria, as well as others. Their stories are full of the love story, greatness, and accomplishments.  If no one wanted to know more couldn't Disney make up some?
Why settle for being just a princess?
